Meat and meat food products must be safe, not contaminated, and properly labeled and packaged. Meat is a major part of the nation’s food supply and most of it is bought and sold across state lines or between countries. Unsafe, altered, or wrongly labeled meat harms people, destroys markets for honest producers, and causes financial losses for livestock owners and processors. Because these products cross state and national borders and affect that trade, the Secretary must regulate them and work with the states and other authorities to prevent problems, protect commerce, and keep consumers healthy.
