Holzminden, a town of approximately 20,000 people in Lower Saxony, Germany, is the world's original synthetic fragrance manufacturing site and remains one of the most concentrated fragrance production nodes on Earth. In 1874, Haarmann isolated coniferin (a component of spruce tree sap from the nearby Solling forest) and chemically converted it to vanillin, achieving the first synthesis of an artificial flavor molecule at commercial scale. Before 1874, vanilla flavor required real vanilla beans, which were expensive, supply-constrained, and geographically tied to Madagascar and Mexico. The Holzminden synthesis democratized vanilla: by 1900, synthetic vanillin from coal tar or pine bark had made vanilla flavor accessible to mass-market food manufacturers. The 1874 Holzminden experiment is the founding moment of the entire synthetic flavor and fragrance industry — from that laboratory, the supply chains for vanilla ice cream, Coke Classic's vanillin-derived flavor notes, and the vanilla extract in every home baker's pantry trace their technological descent. Dragoco (also founded in Holzminden, 1919, by Carl Wilhelm Henkel, also a descendant of the Holzminden fragrance tradition) merged with H&R in 2003 to form Symrise — two Holzminden companies, founded 45 years apart in the same small Lower Saxony town, becoming a single €4.7B global company.
