Soy Lecithin (Emulsifier)

Phospholipid emulsifier extracted during soybean oil refining. Used at 0.2–0.5% in chocolate to reduce viscosity. 62% of global lecithin is soy-derived. A contaminated batch of lecithin from a Hungarian supplier triggered the 2022 Barry Callebaut Wieze salmonella shutdown affecting all production lines simultaneously.
