Synthetic flavor compound produced from guaiacol (petrochemical route) or lignin (wood pulp route). >99% of vanilla flavor used in mass-market chocolate is synthetic vanillin, not natural vanilla. Global market ~13,000 MT/yr. Solvay (~18% share) and Borregaard (~12%) are leading producers.
