Title 21 › Chapter 15— EGG PRODUCTS INSPECTION › § 1040
People and businesses that transport, ship, receive, hold, or handle eggs or egg products in commerce must keep records about when and how they got, moved, sold, or disposed of those eggs. The Secretary of Agriculture or the Secretary of Health and Human Services decides what records are needed, the format, and how long to keep them. If an authorized representative of either Secretary asks, these businesses must allow them to see and copy the records at reasonable times.
