Hilmar Cheese was founded in 1984 in Hilmar, a small community in California's San Joaquin Valley -- the agricultural heartland of California that produces a large fraction of US dairy, almonds, tomatoes, and dozens of other commodities. Hilmar was founded by a group of California dairy farmers who wanted to capture more value from their milk by processing it into cheese locally rather than shipping fluid milk to distant processors. The single Hilmar, California facility grew to become one of the largest cheese plants in the world by scale, processing milk from tens of thousands of regional dairy cows daily. Hilmar remained family-owned throughout its growth -- unlike most competitors of comparable scale who accessed public market capital. The San Joaquin Valley location places Hilmar within the region most vulnerable to California's escalating drought conditions: the Valley's dairy industry depends on irrigated feed crops (alfalfa, corn silage) whose water rights and supply are increasingly contested as California's water system faces long-term stress from climate change.
