    MGP Ingredients (formerly Midwest Grain Products of Kansas) was founded in 1941 in Atchison, Kansas — a Missouri River city with a long grain milling history. The original business was wheat processing: separating starch and protein from wheat flour. Wheat gluten (the protein network in wheat dough) was a food ingredient byproduct of wheat starch processing. The whiskey distilling business grew from the grain processing infrastructure: fermentation and distillation of wheat-derived grain alcohol was a natural extension of a company already processing wheat and operating fermentation capacity. MGP became a major bulk whiskey producer during the 1990s-2000s craft spirits boom — supplying white-label whiskey to dozens of startup "craft" brands that sourced aged distillate from MGP while claiming artisanal production. The brand strategy (acquiring Penelope bourbon in 2021) represented MGP transitioning from pure ingredient/distillate supplier to consumer spirits brand owner.
