Enter the offense the same day in the ship's log when one of the listed offenses happens. Write the facts and have the captain and the chief mate or another crew member sign it. If it was at sea, read the entry to the person and give them a copy before arrival; if it was in port and they remain aboard, do this before leaving. Let them reply and record it with those signatures; a court may refuse evidence if entries aren't produced.
