Small farms can sell uninspected rabbit meat
The law lets unlicensed rabbit producers sell uninspected, processed whole rabbits in New Hampshire. You may sell up to 1,000 per year to licensed restaurants if you raised the rabbits. You may also sell up to 1,000 per year at your farm, farmstand, or a farmers market, but all steps must happen in New Hampshire. You must finish required food-safety training set by state health and agriculture agencies. You must register with the NH Department of Agriculture and provide your farm details and phone; the registry data is protected by law.
State can inspect unsafe rabbit or poultry
The state health department can inspect poultry and rabbit products that are usually exempt if it suspects an imminent health hazard. This covers uninspected products when a serious risk is suspected. It helps protect consumers from unsafe food.
