Easier rules for child care kitchens

Beginning May 6, 2026, the health department sets rules for center-based child care food-prep kitchens with provider input. The rules define which kitchens are exempt and their sanitation and food safety standards. Exemptions must reflect how much, what, and how you cook, and storage—not how many children you serve. For exempt kitchens, rules cannot force commercial dishwashers, ovens/ranges/hoods, freezers, fridges, or a floor sink when dishes are not stored in other sinks. They also cannot require a certified food safety manager if all handlers have permits, a three-compartment sink when no raw meat/fish/poultry is prepared and a sanitized two-compartment sink exists, or a separate handwashing sink.
