Restaurants cook legal catches under safety rules

Louisiana's Catch and Cook Program lets participating food businesses prepare legally caught fish from licensed charter captains or recreational fishers, and alligator from licensed alligator hunters, for those people and their parties. Food businesses and charter captains must apply to the Department of Wildlife and Fisheries for permits; applications and permits are free. Businesses must receive meat within individual fishing limits, already cleaned, filleted, refrigerated, and packed in clean, food-grade, single-use packaging. Labels must show the catch date and time, plus the licensed captain's, fisher's, or hunter's full name and address. Wildlife and Fisheries develops program rules with the state health department, which enforces the food-safety requirements; rule violations can lead to permit suspension or revocation.
