The process

  1. 01

    Agricultural cultivation

    Sugarcane planted as stalk cuttings and harvested after 12–18 months (ratoon crops every 12 months for 5–7 cycles); sugar beet sown in spring and harvested in autumn. Brazil accounts for ~40% of global sugarcane area.

  2. 02

    Milling / juice extraction

    Cane route: stalks shredded and crushed in tandem mills (or diffusers), extracting ~95% of sucrose juice. Beet route: sliced into cosettes and sugar extracted via hot-water countercurrent diffusion.

  3. 03

    Juice clarification

    Cane juice treated with lime and carbon dioxide (carbonation) or lime alone (defecation), coagulating impurities into mud. Beet juice undergoes double carbonation with CO₂. Filter presses or rotary vacuum filters remove mud.

  4. 04

    Evaporation and crystallization

    Clarified juice concentrated in multi-effect evaporators to a thick syrup (~65° Brix), then further boiled in vacuum pans until sucrose crystals nucleate and grow. Three to four boiling stages produce A, B, and C massecuites.

  5. 05

    Centrifuging

    Massecuite spun in centrifuges to separate raw sugar crystals from mother liquor (molasses). High-grade molasses recycled to boiling; final blackstrap molasses sold for ethanol/animal feed.

  6. 06

    Affination and melting

    Raw sugar crystals washed with warm syrup (affination) to remove surface molasses film, then dissolved in hot water to produce high-Brix liquor for refining.

  7. 07

    Refining and decolorization

    Liquor clarified via phosphatation or carbonation, then decolorized by passage through bone char or granular activated carbon (GAC) columns; ion exchange resins polish final liquor to <45 IU color. Crystallized and dried to produce white refined sugar.

  8. 08

    Packaging and distribution

    Refined sugar dried, screened to grade, and packaged in 1–2 kg retail bags, 25/50 kg industrial bags, or bulk tanker loads for industrial food/beverage use. Raw sugar ships in bulk vessels; refined in lined containers.
