    Raw Material Procurement & Incoming Quality

    Agricultural commodities (vegetables, fruit, meat, seafood) are sourced from farms or fisheries and transported to processing facilities under refrigerated conditions. Incoming loads undergo quality inspection, foreign matter detection, and microbial sampling before entering the processing line.

  2. 02

    Washing, Sorting & Trimming

    Raw product is washed with potable water (often treated with food-grade sanitizer), mechanically or manually sorted to remove defects, peeled, sliced, diced, or trimmed to target specifications. Optical sorters and X-ray systems remove stones and foreign material.

  3. 03

    Blanching

    Vegetables and some fruits are briefly immersed in boiling water (85–100°C) or steam for 1–10 minutes to inactivate enzymes (peroxidase, lipoxygenase) that cause color loss, off-flavors, and texture degradation during frozen storage. Product is immediately conveyed to a cooling/chilling stage to halt cooking.

  4. 04

    Dewatering & Pre-Cooling

    Blanched product passes through centrifugal spin-dryers, shakers, or air knives to remove surface moisture. Excess water on product surface leads to clumping in the IQF tunnel and ice agglomeration. Product temperature is brought to near 0°C before entering the freezer.

  5. 05

    IQF Tunnel Freezing

    Product is conveyed through an individual quick freezing (IQF) tunnel where high-velocity cold air at −35°C to −40°C or liquid nitrogen/CO2 spray reduces core product temperature below −18°C in 3–15 minutes. IQF ensures individual pieces do not agglomerate, preserving texture and enabling portion control downstream.

  6. 06

    Packaging & Metal Detection

    Frozen product is conveyed to high-speed form-fill-seal (FFS) or vertical-form-fill-seal (VFFS) packaging machines using LDPE/LLDPE or multi-layer barrier films. Each pack passes through a metal detector and checkweigher before case packing.

  7. 07

    Cold Storage & Blast Freezing

    Finished packaged product enters cold store (−18°C to −25°C) for holding prior to shipment. Large product formats (full meals, large cuts) may require a blast freezer step post-packaging. Cold stores rely on ammonia or HFC refrigeration systems consuming 60–80 kWh per metric ton of throughput.

  8. 08

    Cold Chain Distribution

    Product is loaded into refrigerated trucks or intermodal reefer containers for distribution to retailers, foodservice, or export. The cold chain must be maintained unbroken from −18°C to −22°C; any temperature excursion triggers quality hold protocols. CO2 and dry ice are used for last-mile and e-commerce cold chain.
