    Raw Material Preparation

    Ingredients received at cannery — washed, sorted, graded, trimmed, and blanched (most vegetables). Canneries located near growing areas to minimize time-to-can.

  2. 02

    Can Body Manufacturing & Coating

    Steel tinplate or aluminum sheet formed into cylindrical bodies via draw-and-iron or 3-piece welded process. Interior surfaces coated with epoxy, acrylic, or polyester polymer (BPA-free post-2020) to prevent corrosion and food-metal contact.

  3. 03

    Filling & Liquid Addition

    Prepared food deposited into cans by automated fillers. Accompanying liquid (brine, syrup, broth, sauce) displaces air and aids heat transfer during retort. Net weight monitored continuously.

  4. 04

    Exhausting & Double-Seam Sealing

    Cans pass through steam exhaust box to drive out residual oxygen. A seaming machine forms a hermetic double-seam (4 metal layers with sealing compound) between body and lid. Vacuum confirmed post-seam.

  5. 05

    Retort Sterilization

    Sealed cans loaded into pressure-vessel retorts (autoclaves), subjected to saturated steam at 115–125°C (239–257°F). The thermal process destroys Clostridium botulinum; schedule (F0 value) filed with FDA under 21 CFR Part 113.

  6. 06

    Cooling, Labeling & Distribution

    Cans water-cooled with chlorinated water to prevent post-process contamination, checked for seal integrity, labeled, lot-coded, palletized, and shipped to ambient-temperature warehouses. Shelf life typically 2–5 years.
